We love one pan recipes – it makes clean up a breeze! Simply cut and dice all peppers and onions equal size for quick cooking. If you really want some extra sweet flavor, add some pineapple chunks the last 10 mins of cooking.
2lbs boneless, skinless chicken breasts
3 bell peppers – green, red, yellow or orange
1 medium onion
3 cloves garlic
1 package fajita seasoning packet
8 Mission small taco size flour tortillas
Optional toppings: shredded lettuce, taco sauce, guacamole, salsa, shredded cheese, sour cream (not included in nutrition facts)
Preheat oven to 375. Trim fat from chicken breasts, thinly slice and place in a bowl. Sprinkle fajita mix over chicken and toss to coat. Spray 9×13 glass baking dish with non-stick cooking spray. Place chicken in baking dish. Slice bell pepper, online and mince garlic. Add to pan with chicken. Bake for 20-25 minutes until chicken is cooked. Drain excess liquid. Fill tortilla with chicken and peppers. Top with additional toppings such as lettuce, cheese, salsa if desired.
